Tomatoes

Tomatoes are loaded with lycopene, a phytonutrient and antioxidant.

Lycopene is a carotenoid found in tomatoes and is in fact found in higher concentrations in cooked tomato products, such as tomato sauce or even ketchup (naturally sweetened, please!). The phytonutrient has been proven to protect against many cancers, including colorectal, prostate, breast, endometrial, lung, and pancreatic. Plus, lycopene has heart-protective qualities as well! I grow my own organic tomatoes and love using them to make a fantastic salad with buffalo mozzarella, fresh basil, and a drizzle of extra-virgin olive oil.
